Crispy Lettuce Wraps

INGREDIENTS

  • 2 ½ cups cooked basmati rice
  • 2 tablespoons red curry paste
  • 3 teaspoons avocado oil
  • 1 bunch of parsley, chopped
  • 1 bunch of mint, chopped
  • 2 cucumbers, smashed and chopped
  • Iceberg lettuce for serving

Optional: garnish with toasted coconut flakes or peanuts 

Dressing:

  • 2 tablespoons light soy sauce
  • 1 chili or 1 teaspoon chili flakes
  • 2 cloves garlic
  • Lime juice from ½ lime
  • 1-2 tablespoons sweetener such as honey or agave
  • ¼ cup water
