Crispy Lettuce Wraps

INGREDIENTS
- 2 ½ cups cooked basmati rice
- 2 tablespoons red curry paste
- 3 teaspoons avocado oil
- 1 bunch of parsley, chopped
- 1 bunch of mint, chopped
- 2 cucumbers, smashed and chopped
- Iceberg lettuce for serving
Optional: garnish with toasted coconut flakes or peanuts
Dressing:
- 2 tablespoons light soy sauce
- 1 chili or 1 teaspoon chili flakes
- 2 cloves garlic
- Lime juice from ½ lime
- 1-2 tablespoons sweetener such as honey or agave
- ¼ cup water
