Cucumber Citrus Salad

INGREDIENTS
- 2 cucumbers, thinly sliced or diced
- 1 orange, peeled and chopped
- 1 lime, juiced (or more to taste)
- ¼ red or yellow onion, thinly sliced (optional)
- 1 small handful cilantro, chopped
- 1 jalapeño, finely diced (optional, for a little heat)
- Salt to taste
INSTRUCTIONS
- In a large bowl, combine sliced cucumbers, orange pieces, onion, and jalapeño (if using).
- Add chopped cilantro and squeeze fresh lime juice over everything.
- Sprinkle with a pinch of salt and toss gently.
- Let sit for 5–10 minutes to allow the flavors to blend.
- Serve chilled or at room temperature. If it needs more flavor you can add more lime juice or you can add a squeeze of orange juice!
