Cucumber Lime Agua Fresca

INGREDIENTS 

  • 2 medium cucumbers
  • ¼ -½ cup agave syrup or your favorite sweetener
  • ½ cup fresh lime juice
  • Leaves of 1 mint sprig

INSTRUCTIONS

  1. Trim the ends off the cucumbers and partially peel them, leaving some skin for color and nutrients. Cut into large chunks and place them in a blender. Add agave syrup, lime juice, 5 cups of water, and mint, then blend until smooth. 
  2. Strain the mixture through a fine mesh sieve into a pitcher and chill until ready to serve. Pour over ice and enjoy! Store in the refrigerator for up to 2 days.
