Fajitas

INGREDIENTS
- 1 red bell pepper
- 1 orange bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 red onion
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon oregano
- 2 tablespoons lime juice
- Salt and pepper to taste
Optional: 1 teaspoon cumin and ¾ teaspoon chili powder
INSTRUCTIONS
- Remove the core and seeds from the bell peppers, then slice them along with the onion into thin strips.
- Preheat a large skillet over medium-high heat and add a drizzle of olive oil.
- Add the sliced veggies to the pan, being careful not to overcrowd, and sprinkle your favorite seasonings on top.
- Let the veggies sit undisturbed for a few minutes to develop a nice sear.
- Continue cooking for about 8 minutes, stirring occasionally.
- Just before the final stir, squeeze fresh lime juice over the veggies, toss, and remove from heat.
- Serve as is for a flavorful side, or add chicken or tofu for a more filling meal!
