Fajitas

INGREDIENTS

  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon oregano
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Optional: 1 teaspoon cumin and ¾ teaspoon chili powder

INSTRUCTIONS

  1. Remove the core and seeds from the bell peppers, then slice them along with the onion into thin strips.
  2. Preheat a large skillet over medium-high heat and add a drizzle of olive oil.
  3. Add the sliced veggies to the pan, being careful not to overcrowd, and sprinkle your favorite seasonings on top.
  4. Let the veggies sit undisturbed for a few minutes to develop a nice sear.
  5. Continue cooking for about 8 minutes, stirring occasionally.
  6. Just before the final stir, squeeze fresh lime juice over the veggies, toss, and remove from heat.
  7. Serve as is for a flavorful side, or add chicken or tofu for a more filling meal!
