Fall Harvest Salad

INGREDIENTS
- 1 cup quinoa
- 2 cups water
- 1 teaspoon olive oil
- 4-5 big kale leaves (preferably lacinato kale)
- 2 apples
- 4 oz goat cheese (or other cheese as desired)
Dressing:
- 4 tablespoons Olive oil
- ½ lemon (juice and peel)
- 2 tablespoons mustard (spicy if desired)
- Salt and pepper to taste
- Cook the Quinoa: Follow the package instructions to cook the quinoa. Once cooked, set it aside to cool to room temperature.
- Prep the Kale and Apples: While the quinoa is cooking, remove the stems from the kale, chop the leaves into small pieces, and dice the apples into small cubes.
- Prepare the Goat Cheese: Crumble the goat cheese and set it aside.
- Make the Dressing: In a large bowl, combine olive oil, lemon juice, and lemon zest. Add mustard, salt, and pepper, and whisk everything together until well mixed.
- Combine the Salad: Once the quinoa has cooled, add it to the bowl with the dressing. Toss in the kale, apples, and crumbled goat cheese. Mix everything well until all the ingredients are evenly coated with the dressing.
