Fattoush Salad
INGREDIENTS (Makes 5 Servings)
For the Salad
- 2 lbs tomatoes, chopped
- 1 lb cucumbers, chopped
- ½ onion, diced
- 1 bunch of mint
- 1 bunch parsley, diced
- 5 radish, sliced
- 1 bell pepper, diced
- 1 large head of lettuce
- 2 – 3 handfuls of pita chips
For the Dressing:
- 3 cloves garlic
- 2 tbsp sumac or paprika
- ⅓ pomegranate molasses or honey
- ½ cup lemon juice
- ⅓ cup olive oil
- Salt to taste
INSTRUCTIONS
- In a large bowl, combine the chopped tomatoes, cucumbers, onion, mint, parsley, radishes, bell pepper, and lettuce.
- In a small bowl, whisk together the minced garlic, sumac, pomegranate molasses, lemon juice, olive oil, and salt until well combined.
- Pour the dressing over the salad and toss well to coat all the ingredients evenly
- Just before serving, sprinkle the crushed pita chips on top for extra crunch and flavor

It typically includes sumac, pomegranate molasses, and crunchy pita chips, but if you don’t have these ingredients, you can easily make a Fattoush-inspired salad with simple substitutions. Instead of sumac, try a mix of lemon zest and a pinch of paprika for a similar tangy flavor. If pomegranate molasses isn’t available, balsamic glaze or a combination of honey and lemon juice can work as a sweet and tart replacement. For the pita chips, toasted tortilla strips or croutons can add the same satisfying crunch
