Fresh Tomato and Avocado Salad with Pepitas

INGREDIENTS

  • 2 cups ripe tomatoes, diced
  • 1 avocado, cubed
  • ½ cup cucumber, small dice
  • 2–3 tbsp red onion, very finely diced
  • 1 tbsp jalapeño, very finely minced (adjust to taste)
  • 2–3 tbsp fresh cilantro, chopped
  • Juice of ½–1 lemon
  • 1–2 tsp olive oil
  • 2–3 tbsp toasted pumpkin seeds (pepitas)
  • Pinch of salt

INSTRUCTIONS

  1. In a bowl, combine tomatoes, cucumber, red onion, jalapeño, and cilantro.
  2. Add lemon juice, olive oil, and salt. Toss gently.
  3. Fold in the avocado.
  4. Top with toasted pumpkin seeds right before serving for crunch.
