Garlic Roasted Brussel Sprouts
Ingredients
- 1 1/2 pounds brussels sprouts
- 1 1/2 tbsps olive oil or coconut oil
- 1 medium red onion, cut in 1 inch pieces
- 3 cloves garlic, finely chopped
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- Optional: cumin and paprika
Instructions
- Preheat oven to 425 degrees F. Lightly coat a sheet pan with olive oil or line with parchment paper.
- Cut red onion into 1 inch pieces and place in large bowl.
- Cut off the brown ends of the brussels sprouts and pull off any yellow outer leaves. Cut each sprout in half and place in bowl with onions.
- Coat brussels sprouts and onions olive oil, salt, pepper and optional spices if desired.
- Place the cut side of the onions and sprouts down on the prepared baking sheet
- Roast for 20 to 25 until vegetables are crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts and onions evenly.
- Remove from oven and sprinkle with more kosher salt. Serve immediately.
