Green Goddess Salad
INGREDIENTS
For Salad:
- 1 cucumber
- ½ green cabbage
- 1 bunch green onions
For Dressing:
- 1 cup basil or parsley
- 1 cup spinach
- 1-2 cloves garlic
- 3 tablespoons olive oil
- 1 tablespoon maple syrup
- 2 tablespoons nutritional yeast
- 1 lemon, juiced
- A handful of cashews
- A little water to thin
INSTRUCTIONS
- Finely dice all salad ingredients and place them in a large bowl.
- Place all dressing ingredients in a high speed blender and blend until smooth. Add water to thin until you reach your desired consistency. Add more salt to taste.
- Pour dressing onto the salad and give a good mix! You want the salad to be pretty saucey. Once well combined, serve alone or with pita chips. Enjoy!
