Gyro Dip

Total time: 35 minutes, Servings: 4

INGREDIENTS

  • 1-1.5lbs cucumber, diced or shredded
  • 1-2 tomatoes, diced small
  • 1 red onion, diced small
  • ¼ cup dill, chopped
  • Lemon juice from 1-2 lemons
  • ½ -1 teaspoon garlic powder or granulated garlic(use less for granulated garlic)
  • 1 teaspoon cumin powder
  • ½ teaspoon dried mint or 2-3 leaves fresh
  • Salt and pepper to taste
  • 16-32 ounces vegan greek yogurt or normal greek yogurt
  •  Pita bread or chips to serve

INSTRUCTIONS

  1. Dice all the vegetables. If you prefer a thicker dip, drain the cucumbers before adding them.
  2. In a bowl, combine the diced vegetables with the remaining ingredients. Season with spices, salt, and pepper to taste.
  3. Serve with pita bread, enjoy!
