Healthy Key Lime Pudding
INGREDIENTS
- 2 medium ripe avocados
- 3 tbsp key lime juice
- 2 tbsp dairy free unsweetened yogurt or full fat coconut milk
- 3 tbsp maple syrup
- 1 tsp key lime zest
- 1 tsp vanilla extract
Coconut Milk Whipped Cream - 1 can of full fat coconut milk, chilled
- 1 tbsp honey, maple syrup, or agave
- 2 tsp vanilla extract
INSTRUCTIONS
- Place all ingredients in a blender, and blend on high until smooth, and spoon into bowls.
- Make the coconut whipped cream by opening your can of coconut and scooping off the hardened part of the coconut cream. The liquid coconut milk can be used in smoothies later!
- Using a hand mixer or whisking by hand, fluff up the coconut cream for at least one minute until smooth and creamy. Add your sweetener and vanilla, and mix an additional minute.
- Spoon on top of the pudding, and enjoy!
