Honeydew Melon Slush

Ingredients

  • 1 cup cubed honeydew melon room temperature
  • 3 cups cubed honeydew melon frozen
  • 1/2 cup water or coconut water
  • 1/2 cup mint leaves fresh, tightly packed
  • 3-4 tbsp lemon or lime juice fresh
  • 1 tsp coconut condensed milk or any other sweetener

Instructions

  • Cut the melon into bite-sized chunks and freeze leaving 1 cup at room temperature to make the liquid base.
  • Blend the room temperature melon with the liquid ingredients and mint leaves until liquid mixture forms.
  • Add frozen honeydew chunks. This will give the mixture a slush consistency.
  • Pour mixture into a glass and stir gently. Garnish with mint leaves, if desired.

Notes

This honeydew smoothie / slush can be made 1-2 hours ahead. Store in blender jar in freezer, then re-blend on high speed to combine.
