Immune Boosting Cabbage & Potato Stew

Ingredients

  • –2 tablespoons oil or ¼ cup veggie broth
  • -4 cloves garlic minced
  • –1 onion thinly sliced
  • –½ cabbage chopped and shredded
  • –1-2 potatoes washed and diced (skin can stay on for added nutrition + fiber!
  • –1 tablespoon turmeric
  • –1 inch knob fresh ginger can also use ½ tablespoon ground
  • –Salt & pepper to taste
  • –Optional: tamari or low sodium soy sauce + lime juice
  • Note: you can add in other veggies such as mushrooms peppers, spinach, and chopped yellow squash if you’d like!

Notes

In a soup pot, heat broth or oil on a skillet over medium heat. Saute onion until translucent. Add in a dash of water or broth and add in spices and garlic. Saute for 3-5 minutes for flavors to bloom. Next, add in diced sweet potato and saute for 10 minutes (adding in extra broth as needed). Add in cabbage and the rest of the broth and cook for 15 minutes. Lastly, reduce heat, simmer on low, for another 15 minutes (or until fully cooked). Spice to your level of flavor liking!
