Kale Quinoa Salad

INGREDIENTS

  • 1 cup quinoa 
  • 1 bunch kale
  • ½ cup dried cranberries
  • ½ cup walnuts
  • ½ cup goat cheese

Honey Dijon Dressing: 

  • ½ cup olive (avocado or canola oil)
  • ½ cup apple cider vinegar 
  • 1 tablespoon honey or agave
  • 1 tablespoon dijon mustard
  • ½ teaspoon of salt
  • ½ teaspoon of pepper

DIRECTIONS

  1. Prepare quinoa according to package directions, and let cool before adding to salad. 
  2. Make the honey dijon dressing by whisking together ingredients. 
  3. Wash kale, remove, stems, and chop. Add a small portion of the dressing and massage the kale for 5 minutes. 
  4. Add the dried cranberries, walnuts, and goat cheese. Add the remaining dressing and cooled quinoa and enjoy!
