Lentil Sloppy Joes
Time: 40 minutes, Servings: 8 sandwiches
INGREDIENTS
- 1 large yellow onion, finely chopped
- 1 large green bell pepper, finely chopped
- 5–6 cups water or vegetable broth (use broth for more flavor)
- 2 cups dried lentils, rinsed
- 1 (15-oz) can tomato purée
- 3 Tbsp vegan Worcestershire sauce
- 2 Tbsp coconut sugar (or maple syrup)
- 1 Tbsp apple cider vinegar
- 1 Tbsp chili powder
- 1 Tbsp smoked paprika
- 1 Tbsp garlic powder
- 2 tsp ground cumin
- 2 tsp salt (adjust to taste)
- 2 tsp black pepper
- Optional: pinch of red pepper flakes for heat
- Optional: 1–2 tsp mustard or tomato paste for depth
INSTRUCTION
- Finely chop the onion and green bell pepper.
- In a large pot, combine the lentils, chopped vegetables, and water or broth. Bring to a boil.
- Reduce heat to a gentle simmer and cook uncovered for 20–25 minutes, until lentils are tender. Drain any excess liquid or reserve it to thin the sauce later.
- Stir in tomato purée, Worcestershire sauce, coconut sugar, apple cider vinegar, chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper. Add optional ingredients if using.
- Continue cooking over medium-low heat for 5–10 minutes, stirring occasionally. Add reserved liquid or broth if the mixture becomes too thick.
- Mash the lentils slightly with a fork or an immersion blender, leaving some chunks for texture.
- Taste and adjust seasonings as needed. Serve on buns, over rice, or as desired.
