Lettuce Pesto
Ingredients
- 2 cups lettuce
- 1 cup arugula
- ⅓ cup sunflower seeds can substitute pumpking seeds or pine nuts
- 4 tbsp olive oil
- 3 cloves garlic, substitute ¼ cup chopped garlic scapes or chives
- Salt & pepper to taste
- Water as needed
- Optional add ins: basil, oregano, thyme, parsley, nutritional yeast
Instructions
- Chop lettuce and arugula into smaller pieces. Chop any optional herbs.
- Add all ingredients to blender or food processor, starting with 1/8 cup of water. Pulse until you reach your desires consistency, typically mostly blended but slightly chunky.
- Add water as needed while pulsing to reach desired thickness.
