Lettuce Pesto

Ingredients

  • 2 cups lettuce
  • 1 cup arugula
  • cup sunflower seeds can substitute pumpking seeds or pine nuts
  • 4 tbsp olive oil
  • 3 cloves garlic, substitute ¼ cup chopped garlic scapes or chives
  • Salt & pepper to taste
  • Water as needed
  • Optional add ins: basil, oregano, thyme, parsley, nutritional yeast

Instructions

  • Chop lettuce and arugula into smaller pieces. Chop any optional herbs.
  • Add all ingredients to blender or food processor, starting with 1/8 cup of water. Pulse until you reach your desires consistency, typically mostly blended but slightly chunky.
  • Add water as needed while pulsing to reach desired thickness.
