Local Veggie Pasta Salad

INGREDIENTS

  • 16 oz pasta – rotini 
  • Water for boiling
  • 1 cucumber, seeded and cubed
  • 1 medium tomato, cubed
  • 3 red carmen peppers(sweet peppers), chopped
  • ½  cup black olives, sliced 
  • 1 cup fresh basil leaves torn or sliced
  • 1 cup flat leaf parsley, chopped
  • 1 cup mozzarella cheese (vegan) shredded or cubed

Dressing:

  • ¼ cup olive oil
  • ¼  cup apple cider vinegar or lemon juice 
  • 1 teaspoon dried Italian seasoning
  • 2 garlic cloves, minced
  • 1 teaspoon sea salt
  • Freshly ground pepper

INSTRUCTIONS

  1. Cook the pasta according to the package instructions. Once cooked, let it cool to room temperature. While the pasta is cooking, seed and cube the cucumber, cube the tomatoes, chop the peppers, slice the olives, chop the parsley, and tear or slice the basil. Cube or shred the mozzarella cheese.
  2. For the dressing, pour olive oil and apple cider vinegar or lemon juice into a large bowl. Mince and add the garlic, then add the Italian seasoning, salt, and pepper. Whisk together until well mixed.
  3. Add the cooled pasta, prepared vegetables, and cheese to the bowl with the dressing. Mix everything well until evenly combined. Your dish is now ready to serve!
