Local Veggie Stir Fry

INGREDIENTS
- 2 tablespoons sesame (or olive, avocado) oil
- 4 carrots, cut into thin strips
- 2 red (or any color) bell peppers, cut into thin strips
- 1 yellow onion, cut into thin strips
- 1 bunch bok choy, cut to large bite-size pieces
- 1 bunch kale, also cut to large bite-size pieces
- 1 tablespoon each, fresh ginger and garlic, grated
Sauce:
- 4 tablespoons cold water
- 3 tablespoons soy sauce
- 1 tablespoon Hoisin sauce
- 1 teaspoon coconut sugar
- ¼ teaspoon ground black pepper
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
Garnishes:
- Fresh cilantro, chopped
- Radish, sliced thin
Serve With:
- Brown rice / noodles
INSTRUCTIONS
- Heat 2 tablespoons of oil in a large skillet over medium-high heat.
- Add carrots, onion, and peppers. Sear for 2 minutes without stirring.
- Flip, then cook and stir occasionally for 6 minutes until tender. Add a pinch of salt and black pepper. Add water if needed to prevent burning/sticking.
- Add ginger and garlic. Cook for 1-2 minutes. Transfer vegetables to a plate.
- In the same skillet, heat 1/4 cup water over medium-high heat. When simmering, add bok choy and a pinch of salt. Add more water if needed. Cover and steam for 4 minutes.
- Uncover, stir, then add chopped kale. Cover and cook for 1-2 minutes until softened.
- Mix sauce ingredients in a small bowl.
- Return the cooked vegetables to the pan. Stir and keep heat at medium-high.
- Pour in the sauce. Stir and cook for about 1 minute until it thickens. Adjust with soy sauce or water as needed.
- Serve plain or over noodles/rice with garnish toppings.
