Marinated Greens with Fresh Herbs

INGREDIENTS
- 1 bunch kale
- ½ bunch Swiss chard
- ½ bunch collard greens
- 2-3 Tablespoons fresh oregano
- ¼ cup parsley
- 2 Tablespoons fresh mint
- 2 teaspoons garlic powder
- Salt and pepper to taste
- ¼ cup olive oil
- 1 Tablespoon Dijon mustard
- 2-3 Tablespoons lemon juice
INSTRUCTIONS
- Remove stems from kale, chard, and collards, then finely shred the leafy greens with a knife.
- Place greens in a large bowl with a pinch of salt and a splash of olive oil. Massage with your hands for 1-2 minutes until softened.
- Finely chop all herbs and add to massaged greens.
- In a small bowl – combine garlic, salt, pepper, ¼ cup olive oil, mustard, and lemon juice. Whisk until smooth.
- Pour dressing over the top and toss well to coat.
- Let sit for at least 20 minutes at room temperature, or refrigerate overnight.
