Mashed Rutabagas

Ingredients

  • 2 pounds peeled rutabagas cut in large chunks
  • Cold salted water
  • 3 to 4 tablespoon coconut oil or coconut milk
  • Pinch of salt
  • Pinch of nutmeg

Instructions

  • Peel rutabagas, and cut them into large chunks. Put them in a pan of cold, salted water, cover and bring to a boil. Simmer until very tender, 30-40 minutes.
  • Drain the rutabagas, return them to the pan, and heat gently for 2 or 3 minutes to dry them. Mash the chunks with a potato masher or fork. (It will always be slightly fibrous.)
  • Work in coconut oil or milk with a generous pinch of nutmeg (optional), taste, and adjust the seasoning. You may need more salt, but go easy!

Notes

Rutabagas are high in Potassium, and Magnesium. It also provides large amounts of Vitamin C for immune support. They are high in insoluble fiber which is supportive of gut health!
