Mediterranean Chickpea Salad
INGREDIENTS
- 1 can chickpeas, drained
- Can sub any canned white beans as well
- 1 can diced tomatoes, drained
- 1 small can black olives, drained and sliced
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- Can sub white or apple cider vinegar in a pinch
- 1 tablespoon minced red onion and/or garlic
- Can sub 2 teaspoons garlic powder and 2 teaspoons onion powder
- 2 teaspoons dried dill
- Salt and pepper to taste
DIRECTIONS
- In a large bowl, combine the chickpeas, diced tomatoes, and olives
- Add the rest of the ingredients and toss to combine
- Let sit for a few minutes to allow the flavors to meld.
