Mediterranean Chickpea Salad

INGREDIENTS

  • 1 can chickpeas, drained
    • Can sub any canned white beans as well
  • 1 can diced tomatoes, drained
  • 1 small can black olives, drained and sliced
  • 1 tablespoon olive oil 
  • 1 tablespoon balsamic vinegar
    • Can sub white or apple cider vinegar in a pinch
  • 1 tablespoon minced red onion and/or garlic
    • Can sub 2 teaspoons garlic powder and 2 teaspoons onion powder
  • 2 teaspoons dried dill
  • Salt and pepper to taste

DIRECTIONS

  1. In a large bowl, combine the chickpeas, diced tomatoes, and olives
  2. Add the rest of the ingredients and toss to combine
  3. Let sit for a few minutes to allow the flavors to meld.
