Mexican Black Bean Casserole

Makes a great meatless, easy meal. Serves 4-6

Ingredients

  • 1 bell pepper diced (1 cup)
  • 1/2 cup onion diced
  • 1 clove garlic minced
  • 3 cups cooked quinoa or brown rice
  • 2 tsp chili powder
  • 1/2 tsp cumin powder
  • 1/4 tsp salt
  • 1 can black beans drained and rinsed or 1 1/2 cups cooked beans
  • 1 can corn or 1 1/2 cups cooked or frozen
  • 1 cup crushed tomatoes canned or fresh
  • 1 bunch cilantro chopped
  • 1 cup cheese shredded cheddar, colby jack , or nutritional yeast
  • Optional: Avocado as a garnish

Instructions

  • Preheat oven to 350 F. Heat oil over medium heat in a medium skillet. Add garlic, peppers and onion. Cook for 3 to 5 minutes.
  • In a bowl add cooked onion and pepper mixture with the cooked quinoa, black beans, tomatoes, corn, cilantro , chili powder, cumin, salt and pepper and stir to mix.
  • Place mixture in a casserole dish and top with shredded cheese.
  • Bake for 15-20 minutes or until cheese melts.
  • Top with avocado if desired and enjoy!
