Mexican Black Bean Casserole
Mexican Black Bean Casserole
Makes a great meatless, easy meal. Serves 4-6
Ingredients
- 1 bell pepper diced (1 cup)
- 1/2 cup onion diced
- 1 clove garlic minced
- 3 cups cooked quinoa or brown rice
- 2 tsp chili powder
- 1/2 tsp cumin powder
- 1/4 tsp salt
- 1 can black beans drained and rinsed or 1 1/2 cups cooked beans
- 1 can corn or 1 1/2 cups cooked or frozen
- 1 cup crushed tomatoes canned or fresh
- 1 bunch cilantro chopped
- 1 cup cheese shredded cheddar, colby jack , or nutritional yeast
- Optional: Avocado as a garnish
Instructions
- Preheat oven to 350 F. Heat oil over medium heat in a medium skillet. Add garlic, peppers and onion. Cook for 3 to 5 minutes.
- In a bowl add cooked onion and pepper mixture with the cooked quinoa, black beans, tomatoes, corn, cilantro , chili powder, cumin, salt and pepper and stir to mix.
- Place mixture in a casserole dish and top with shredded cheese.
- Bake for 15-20 minutes or until cheese melts.
- Top with avocado if desired and enjoy!
