Mint Double Chocolate Pudding

Ingredients

  • ½ avocado flesh
  • 2 tbsp unsweetened cocoa powder
  • 1 medium very ripe cold banana
  • 1/4 cup plain Greek yogurt or coconut milk or almond milk yogurt
  • mint extract to taste (a few drops should do)
  • dark chocolate chips

Instructions

  • Blend everything together (except the mint extract and dark chocolate chips) with an immersion blender or a small food processor until the ingredients are very creamy.
  • Add mint extract to taste and gently stir in dark chocolate chips.
  • Serve immediately or refrigerate and serve within 4 hours.
