Moroccan Cumin Carrot Salad

INGREDIENTS (Makes 4 Servings)

For the Dressing

  • 1 tbsp cumin
  • ¼ cup avocado oil
  • 2 tsp sesame oil
  • 2 tbsp dijon mustard
  • 3 tbsp honey
  • 1 lime, zested and juiced
  • 1 clove garlic

For the Salad

  • 3 – 4 carrots, ribboned with peeler
  • 1 cucumber, ribboned
  • ¼ cup fresh cilantro or parsley, chopped
  • ½ cup toasted almond slices
  • ¼ cup toasted sesame seeds
  • ¼ cup golden raisins (warmed for a few minutes with the sesame seeds)

INSTRUCTIONS

  1. In a large bowl whisk together all the dressing ingredients together.
  2. In a pan with no oil toss sesame seeds and raisins on a medium heat for about 2 minutes
  3. Toss all the salad ingredients into a large bowl and mix
