One Pot Chili
Ingredients:
- 1 can black beans
- 1 can kidney beans
- Or any canned beans you have
- 1 large (or 2 regular-sized) cans crushed, pureed, or diced tomatoes
- Can also use pasta sauce
- 1 can corn
- Any fresh veggies on hand – peppers, spinach (use first) – onion, sweet potatoes (can last longer)
- Optional, but good if you need to stretch this meal out or use something up before it goes bad
- Can also use frozen, if available
- 3 Tablespoons chili powder
- 1 Tablespoon cumin
- 1 Tablespoon garlic powder
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Splash of apple cider vinegar
Directions:
- Set a medium-sized pot out on a burner .
- If adding fresh vegetables, dice them up and throw them in the pot with a little olive oil. Saute over medium heat until cooked through.
- Add the rest of the ingredients and simmer for about 15-20 minutes.
