One Pot Vegetable Soup
Ingredients:
- 2 cans diced tomatoes
- 1 can butter beans, drained
- 1 can corn, drained
- 1 can vegetable broth (or 2 cups water and boullion)
- 1 can green beans, drained
- 1 can diced carrots, drained
- 2 teaspoons garlic powder
- 2 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- Salt and pepper to taste
Instructions:
- In a large pot, combine all ingredients and stir well
- Cook over medium heat. Bring to a boil, then reduce to simmer
- Let simmer for about 15-20 minutes, stirring occasionally
- Season with salt and pepper
*Feel free to customize with any other canned vegetables or spices you have.
*If you have fresh vegetables on hand, you can also dice them up and add them to the pot before putting it on the heat and cover when cooking.
