One Pot Vegetable Soup

Ingredients:

  • 2 cans diced tomatoes
  • 1 can butter beans, drained
  • 1 can corn, drained
  • 1 can vegetable broth (or 2 cups water and boullion)
  • 1 can green beans, drained
  • 1 can diced carrots, drained
  • 2 teaspoons garlic powder
  • 2 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and pepper to taste

Instructions:

  1. In a large pot, combine all ingredients and stir well
  2. Cook over medium heat. Bring to a boil, then reduce to simmer
  3. Let simmer for about 15-20 minutes, stirring occasionally
  4. Season with salt and pepper

*Feel free to customize with any other canned vegetables or spices you have.

*If you have fresh vegetables on hand, you can also dice them up and add them to the pot before putting it on the heat and cover when cooking.
