Peach Bruschetta

INGREDIENTS

  • 1 pint grape tomatoes, diced
  • 3 medium peaches, diced
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons finely chopped fresh basil
  • Kosher salt and freshly ground black pepper, to taste
  • 1 French baguette, cut into 1/2-inch thick slices
  • Olive oil, for brushing bread
  • 1 tablespoon garlic powder
  • Whipped feta cheese (optional)
  • Honey (for drizzling)

INSTRUCTIONS

  1. Preheat oven to 450 degrees F.
  2. In a medium bowl, combine the tomatoes, peaches, olive oil, vinegar, basil, salt, and pepper. Let sit while you toast the bread.
  3. Place the baguette slices in a single layer on a large baking sheet. 
  4. Brush the tops of the baguette slices with olive oil, then sprinkle garlic powder over them.
  5. Place the baking sheet in the oven and bake until bread slices are toasted, about 5 minutes. Remove from the oven.
  6. Spread each piece of bread with whipped feta, if using. 
  7. Top with peach-tomato topping and drizzle with honey. Serve!
