Peanut Butter Banana Pudding

INGREDIENTS
- 2 ripe bananas
- ½ cup smooth peanut butter (or other nut/seed butter – no sugar added)
- ½ cup Greek yogurt (or dairy-free)
- 2 – 3 Tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- Pinch of salt
INSTRUCTIONS
- Add bananas, peanut butter, yogurt, sweetener, vanilla, and a pinch of salt to a blender.
- Blend until smooth and creamy. Taste and adjust the sweetness if needed.
- Transfer to the fridge and chill for at least 30 minutes to set.
- Before serving, top with crushed peanuts, granola, cacao nibs, or banana slices.
