Peanut Butter Banana Pudding

INGREDIENTS

  • 2 ripe bananas
  • ½ cup smooth peanut butter (or other nut/seed butter – no sugar added)
  • ½ cup Greek yogurt (or dairy-free)
  • 2 – 3 Tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt


INSTRUCTIONS

  1. Add bananas, peanut butter, yogurt, sweetener, vanilla, and a pinch of salt to a blender.
  2. Blend until smooth and creamy. Taste and adjust the sweetness if needed.
  3. Transfer to the fridge and chill for at least 30 minutes to set.
  4. Before serving, top with crushed peanuts, granola, cacao nibs, or banana slices.
