Pumpkin Hummus

Ingredients

  • 2 cans chickpeas, drained (reserve liquid) and rinsed
  • 1 can pumpkin puree (or 2 cups homemade pumpkin puree)
  • 4 tablespoons aquafaba (reserved liquid from chickpea can) or olive oil
  • 4 cloves garlic
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 3/4 teaspoon cayenne pepper
  • 1 teaspoon freshly grated nutmeg
  • juice of 1 lemon about 3 tablespoons

Instructions

  • Puree all ingredients in a food processor until uniform.
  • Serve with flatbread and fresh veggies.
