Pumpkin Hummus Recipe
Pumpkin Hummus
Ingredients
- 2 cans chickpeas, drained (reserve liquid) and rinsed
- 1 can pumpkin puree (or 2 cups homemade pumpkin puree)
- 4 tablespoons aquafaba (reserved liquid from chickpea can) or olive oil
- 4 cloves garlic
- 1 tablespoon cumin
- 1 teaspoon salt
- 3/4 teaspoon cayenne pepper
- 1 teaspoon freshly grated nutmeg
- juice of 1 lemon about 3 tablespoons
Instructions
- Puree all ingredients in a food processor until uniform.
- Serve with flatbread and fresh veggies.
