Pumpkin Protein Bites

Ingredients

  • ½ cup pumpkin puree
  • 1 ½ cups dry oats
  • 1 tablespoon maple syrup
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • ¼ cup chia seeds
  • ¼ cup flax seeds
  • ½ cup peanut or almond butter
  • ¼ cup coconut flakes optional
  • ½ cup dark chocolate chips optional

Instructions

  • Add pumpkin puree, oats, maple syrup, spices, seeds, and nut butter into a medium size bowl. Mix together very well until it is somewhat sticky and can be rolled into your hands.
  • Once mixed together thoroughly, add in the chocolate chips and coconut flakes. Mix well.
  • When finished mixing, add a spoonful into your hand and roll into small balls. Repeat with remaining mixture.
  • Place balls in fridge to chill for about 4 hours.

Notes
