Pumpkin Protein Bites
Ingredients
- ½ cup pumpkin puree
- 1 ½ cups dry oats
- 1 tablespoon maple syrup
- ½ teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- ¼ cup chia seeds
- ¼ cup flax seeds
- ½ cup peanut or almond butter
- ¼ cup coconut flakes optional
- ½ cup dark chocolate chips optional
Instructions
- Add pumpkin puree, oats, maple syrup, spices, seeds, and nut butter into a medium size bowl. Mix together very well until it is somewhat sticky and can be rolled into your hands.
- Once mixed together thoroughly, add in the chocolate chips and coconut flakes. Mix well.
- When finished mixing, add a spoonful into your hand and roll into small balls. Repeat with remaining mixture.
- Place balls in fridge to chill for about 4 hours.
Notes
