Quinoa Pilaf
Ingredients
- 2 cups water or veggie broth
- 1 cup quinoa
- 1 tsp salt
- 1 tbsp olive oil
- 1/2 cup diced onions
- 1 small clove garlic minced
- 1/2 cup diced sweet red pepper
- 1/2 cup grated carrot
- Optional thyme, oregano, or other seasonings
- Salt and pepper to taste
Instructions
- Bring water or broth to boil, add salt.
- Meanwhile, rinse quinoa in cold water. Add quinoa, reduce heat to simmer and cover. Cook about 20 minutes, checking to make sure the liquid doesn’t boil away. When tender, fluff with a fork.
- On stove top, saute garlic, onions, red pepper and carrot in olive oil until fork tender, about ten minutes. Mix vegetables and quinoa together; salt and pepper to taste.
