Quinoa Pilaf

Ingredients

  • 2 cups water or veggie broth
  • 1 cup quinoa
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 1 small clove garlic minced
  • 1/2 cup diced sweet red pepper
  • 1/2 cup grated carrot
  • Optional thyme, oregano, or other seasonings
  • Salt and pepper to taste

Instructions

  • Bring water or broth to boil, add salt.
  • Meanwhile, rinse quinoa in cold water. Add quinoa, reduce heat to simmer and cover. Cook about 20 minutes, checking to make sure the liquid doesn’t boil away. When tender, fluff with a fork.
  • On stove top, saute garlic, onions, red pepper and carrot in olive oil until fork tender, about ten minutes. Mix vegetables and quinoa together; salt and pepper to taste.
