Ratatouille

INGREDIENTS

  • 1 medium eggplant, cut into ½ inch pieces
  • 6 tablespoons olive oil 
  • 2 medium zucchini, 1 pound, cut into ½ inch pieces
  • 1 medium yellow onion, diced
  • 1 red or yellow bell pepper, stemmed, seeded, and cut in ½ inch pieces
  • 3 cloves garlic, chopped
  • 1 lb tomatoes, cut into half inch pieces
  • Pinch of red pepper flakes
  • 1 tablespoon white wine vinegar 
  • 2 teaspoons chopped thyme leaves
  • ¼ cup thinly sliced basil leaves 
  • Salt and pepper to taste

INSTRUCTIONS

  1. Place the eggplant in a colander, sprinkle with ½ teaspoon salt, and set aside for 20 minutes to drain. Blot dry with a towel.
  2. Heat 3 tablespoons olive oil in a skillet over medium heat, add the eggplant, and cook for 10–15 minutes until tender. Transfer to a bowl.
  3. Add 1 tablespoon oil to the skillet, cook the zucchini for 3–5 minutes until tender but not mushy, season with ¼ teaspoon salt, and transfer to the bowl with the eggplant.
  4. Add 1 tablespoon oil, onion, and pepper to the skillet, cooking for 5 minutes. Add garlic and ¼ teaspoon salt, cooking until very tender. Stir in another tablespoon of oil, tomatoes, red pepper flakes, and sugar, cooking until tomatoes break down.
  5. Return eggplant and zucchini to the skillet. Add vinegar, thyme, ¼ teaspoon salt, and pepper, cooking until thick. Stir in basil, adjust seasoning, and garnish with extra basil before serving.
