Roasted Beet Salad

INGREDIENTS
For Dressing:
- ¼ cup apple cider vinegar
- 1 teaspoon maple syrup or honey
- 2 cloves of garlic, minced
- 1 teaspoon dijon mustard
- ¼ cup olive oil
- Salt and pepper to taste
For Salad:
- 2 cups arugula
- 5 radishes, sliced
- 1 cup farro
- 4-5 beets, peeled, ends sliced off and cut into wedges(and/or carrots
- 1 lemon, juiced
- 1 tablespoon honey
- 1 tablespoon avocado oil or olive oil
INSTRUCTIONS
- Preheat oven to 400°F (200°C).
- Prepare beets: Toss beets with 1 tbsp avocado oil, salt, and pepper. Spread on a baking sheet. Roast for 20 minutes, stir, then roast for another 20 minutes or until desired texture. Drizzle with honey.
- Cook farro according to package instructions. Let cool, then mix with lemon juice, salt, and pepper in a large salad bowl.
- Make dressing: Combine dressing ingredients in a small bowl or jar and whisk or shake well.
- Assemble salad: Add arugula, radishes, and roasted beets to the farro. Pour dressing over, mix well, and enjoy!
