Roasted Burdock Root

Ingredients

  • 2 cups chopped burdock root
  • 1 tbsp olive oil
  • Pinch of Sea salt

Optional:

  • 1 tsp tamari
  • ½ tbsp sesame seeds
  • 1 tsp paprika

Instructions

  • Preheat oven to 350.
  • Thoroughly wash burdock roots, leaving skin on.
  • Chop roots into moons.
  • Toss in a bowl with olive oil and sea salt. Add optional ingredients if using.
  • Spread burdock in a single layer on a baking sheet and bake for 25-30 minutes, until tender when pierced with a fork.
