Roasted Yuca with Herbs

INGREDIENTS
- 1 lb frozen yuca root or 1 lb fresh yuca root
- 4 tablespoons olive oil
- 1 teaspoon dried cilantro or 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- salt & freshly ground black pepper
- 2 tablespoons fresh lime juice, for serving
INSTRUCTIONS
- Bring a large pot of salted water to a boil. Add the yuca and cook until just tender, about 15 minutes. Drain and set aside.
- Preheat your oven to 400°F.
- In a medium bowl, whisk together olive oil, fresh cilantro or oregano, parsley, onion powder, garlic powder, ground cumin, salt, and pepper.
- Gently toss the cooked yuca in the herb and spice mixture until fully coated.
- Spread the yuca in a single layer on a lightly greased baking dish. Roast for 30-40 minutes, or until the yuca is tender and golden brown.
- Finish with a squeeze of fresh lime juice, toss once more, and serve immediately.
