Root Vegetable Hash

INGREDIENTS
- 2 beets
- 3 turnips
- 3 sweet potatoes
- 1 onion
- 5-6 radishes
- 2 tablespoons olive or avocado oil
- 3 teaspoons salt
- 3 teaspoons pepper
- 3 teaspoons garlic powder
- 1 teaspoon dried or fresh sage
- 1 teaspoon dried or fresh rosemary
- 1 teaspoon dried or fresh thyme
INSTRUCTIONS
1. Preheat oven to 425 Fahrenheit.
2. Dice all vegetables to 1/2-1/4 inch.
3. Place on large sheet pan with parchment paper or silicone mat.
4. Coat veggies with oil, then add seasonings and mix until completely coated.
5. Bake for approximately 30-40 minutes, stirring once halfway, until browned. Enjoy!
