Rosemary Dijon Potatoes

INGREDIENTS 

  • 1 large onion
  • 1 pound potatoes
  • 2 green bell peppers
  • 2 Tablespoons olive oil
  • 2 teaspoons each – salt and pepper
  • 1 teaspoon rosemary, crushed
  • 1 bunch kale

Dressing:

  • 1 Tablespoon Dijon mustard
  • ½ Tablespoon olive oil
  • ½ Tablespoon lemon juice or vinegar
  • 2 teaspoons garlic powder
  • Fresh parsley (optional)

INSTRUCTIONS

  1. Dice the onion, potatoes, and peppers into ½-inch pieces.
  2. Heat a nonstick skillet over medium heat and add a drizzle of oil.
  3. Add the diced vegetables, stirring to coat them evenly in the oil.
  4. Season with salt, pepper, and rosemary. Cover and cook for 10 minutes.
  5. While the vegetables cook, chop the kale.
  6. After 10 minutes, uncover the skillet and stir in the kale.
  7. Increase the heat to medium-high and continue cooking for about 15 minutes, stirring occasionally.
  8. While the veggies finish cooking, whisk together the dressing ingredients.
  9. In the final minute of cooking, drizzle the dressing over the skillet and toss to coat.
  10. Taste and adjust the seasoning as needed. Serve warm and enjoy!
