Rutabaga Ginger Soup

Ingredients

  • 2 cups peeled cubed rutabaga
  • 2 cups peeled sliced carrots
  • ¾ cup chopped celery
  • ½ cup chopped onion
  • ¾ cups cubed potato
  • 1 large garlic cloves minced
  • 1 tbsp olive oil or other oil
  • 3 cups vegetable stock
  • Salt & Pepper
  • 1 tbsp grated ginger
  • ½ cup coconut milk
  • 1 tbsp Dijon mustard

Instructions

  • Cut vegetables and mince garlic. Place oil in a large pot that is heated to medium heat. Add in all vegetables.
  • Stir and allow the vegetables to cook for 5 minutes. Add in salt & pepper, ginger, and vegetable stick. Simmer for 10 minutes.
  • Lower to medium heat and allow to cook for 25 more minutes or until rutabaga and potatoes are soft. Transfer to a blender and blend until a pureed consistency is reached.
  • Add in coconut milk and mustard. Stir and ENJOY!

Notes

Rutabagas are an excellent source of magnesium, potassium, calcium, iron, and zinc. It is rich in Vitamin E, Vitamin K, and Vitamin C. Rutabagas are beneficial for immune support, and bone health!
