Sautéed Cabbage

INGREDIENTS
- 1 medium head cabbage
- 2 tablespoons olive oil
- 4 cloves garlic
- 1 tablespoon butter or coconut oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon paprika
- Salt and pepper to taste
- Nutritional yeast to top
INSTRUCTIONS
- Cut the cabbage into quarters and remove the core. Thinly slice each quarter, then gently separate the slices into shreds.
- In a medium pan, heat the olive oil over medium-high heat. Add the garlic and paprika, sautéing for about a minute until fragrant.
- Add the sliced cabbage to the pan. (If the pan is too full, add the cabbage in batches, allowing it to wilt slightly between additions.) Sauté for 10-15 minutes, stirring every 1-2 minutes with tongs to encourage browning and caramelization.
- For extra flavor, reduce the heat to medium-low during the last minute or two of cooking. Stir in butter until melted, and/or apple cider vinegar.
- Remove from heat, season with salt and pepper to taste, and sprinkle with nutritional yeast!
