Sautéed Cabbage and Apples

INGREDIENTS

  • 1 small head of cabbage, thinly sliced
  • 2 apples, peeled and thinly sliced
  • ½ small onion, thinly sliced (optional)
  • 3 tbsp vegan butter or olive oil, divided
  • ½ cup fresh cranberries
  • 1–2 tsp maple syrup (or to taste)
  • 1 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp caraway seeds
  • ¼ tsp ground allspice
  • Salt and pepper, to taste
  • Fresh dill, for garnish

INSTRUCTION

  1. Sauté the apples: In a large skillet, heat 1½ teaspoons of vegan butter over medium heat. Add the apple slices and cook for 5–6 minutes, stirring occasionally, until they start to soften.
  2. Add flavorings: Stir in the brown sugar, apple cider vinegar, caraway seeds, and ground allspice. Cook for about 1 minute, until the mixture is fragrant and lightly caramelized.
  3. Cook the cabbage: Add the sliced cabbage along with the remaining butter. Season with salt and pepper. Gently sauté for 2–3 minutes until the cabbage softens slightly but still has a little crunch. Taste and adjust seasoning as needed.
  4. Prepare the cranberries: While the cabbage is cooking, combine the cranberries, maple syrup, and a splash of water in a small saucepan. Simmer for 3–5 minutes until the cranberries soften slightly but maintain some shape.
  5. Serve: Plate the sautéed cabbage and apples, then spoon the sweetened cranberries on top. Garnish with fresh dill for a bright, fresh finish.
