Sauteed Oyster Mushrooms
Ingredients
- 1 lb fresh oyster mushrooms
- ½ onion finely chopped
- 1 clove of garlic minced
- 1 tsp. olive oil
- splash of white cooking wine or vegetable broth
- OPTIONAL: Additional veggie broth to make a sauce, leafy greens of choice (kale, collard, spinach, swiss chard, dandelion greens), chili powder
Instructions
- Chop mushrooms into bite sized pieces.
- Add mushrooms to a cold pan and put on medium heat to sweat them. (Mushrooms are mostly water so by cooking the water off before adding butter or cooking oil, it increases the mushroom flavor and improves the texture).
- When the steam coming from the mushrooms begins to slow down (after 5-10 minutes) or the mushrooms start to stick to the pan, add the cooking wine or vegetable broth, seasonings, onion and garlic.
- For more of a sauce, add veggie broth until you reach the consistency you desire.
- Cook for another 5-10 minutes to reach desired texture.
- Add in leafy greens and saute’ until they are wilted.
- Serve as a side or on top of whole wheat pasta or spaghetti squash.
