Sauteed Radish Greens with Chickpeas
Ingredients
- 1 bunch radish greens
- 1 garlic clove minced
- 1 tbs olive oil or coconut oil
- 1 cup Garbanzo beans rinsed
- Salt and pepper to taste
- OPTIONAL: 1 tbsp balsamic vinegar
- Splash of liquid aminos instead of salt
- Add singer and swap in sesame oil instead of coconut or olive oil
Instructions
- Wash the radish greens then chop them. Heat the oil over medium heat. Add radish greens to the frying pan and cook, stirring periodically until they wilt (2 minutes).
- Add minced garlic and beans. Stir for 30 seconds. Remove the greens and serve.
Notes
Radish greens are abundant with antioxidants called flavonoids that help fight inflammation in the body and help prevent chronic disease! In addition radish greens are super high in Vitamin C, Vitamin K, Iron and Calcium! They are also beneficial for digestion and gut health due to high amounts of fiber!
