Sauteed Sesame Broccoli with Peanut Sauce
Ingredients
- ½ onion diced
- 1 clove garlic minced
- 1 cup broccoli chopped
- 1 bell pepper sliced into strips
- ½ onion sliced into strips
Dressing
- ¼ cup rice wine vinegar
- 2 tablespoons peanut butter
- 2 tablespoons water heated to melt peanut butter
- 1 tablespoons sesame oil
- 1 tablespoon honey agave, or pure maple syrup
- 2 cloves garlic minced
- Juice of 1 lime
- Optional toppings: sesame seeds, nutritional yeast
Instructions
- Whip up dressing in a mason jar and shake vigorously (or add into a blender or a bowl to whisk).
- Saute garlic and onion with a dash of water or veggie broth.
- Once onions are translucent, add in broccoli & bell pepper.
- Add in more water or veggie broth, if needed.
- Cook for 5-10 minutes, or until broccoli is tender.
- Mix with the delicious dressing and top with optional sesame seeds.
