Sauteed Sesame Broccoli with Peanut Sauce

Ingredients

  • ½ onion diced
  • 1 clove garlic minced
  • 1 cup broccoli chopped
  • 1 bell pepper sliced into strips
  • ½ onion sliced into strips

Dressing

  • ¼ cup rice wine vinegar
  • 2 tablespoons peanut butter
  • 2 tablespoons water heated to melt peanut butter
  • 1 tablespoons sesame oil
  • 1 tablespoon honey agave, or pure maple syrup
  • 2 cloves garlic minced
  • Juice of 1 lime
  • Optional toppings: sesame seeds, nutritional yeast

Instructions

  • Whip up dressing in a mason jar and shake vigorously (or add into a blender or a bowl to whisk).
  • Saute garlic and onion with a dash of water or veggie broth.
  • Once onions are translucent, add in broccoli & bell pepper.
  • Add in more water or veggie broth, if needed.
  • Cook for 5-10 minutes, or until broccoli is tender.
  • Mix with the delicious dressing and top with optional sesame seeds.
