Sesame Kale Salad

INGREDIENTS
- 1 bunch kale (washed, stems removed, and leaves chopped)
- ½ head cabbage (shredded)
- ½ cup dried cranberries
- ¼ – ½ cup toasted sesame dressing (like Trader Joe’s brand)
INSTRUCTIONS
- Prepare the Kale: Place the chopped kale in a large mixing bowl. Add half of the sesame dressing (about 2-3 tablespoons) to the bowl.
- Massage the Kale: Use your hands to gently massage the kale for 2-3 minutes. Squeeze and rub the leaves to soften them, making them more tender and flavorful. The kale will turn a darker green and shrink in volume as it becomes more tender.
- Combine Ingredients: Add the shredded cabbage and dried cranberries to the bowl with the massaged kale. Toss to combine.
- Dress the Salad: Pour the remaining sesame dressing over the salad (use as much as you like, depending on your taste preference) and toss everything together until well coated.
- Serve: Let the salad sit for 5-10 minutes to allow the flavors to meld. Serve fresh as a side dish or light meal.
