Smoky Greens & Beans

INGREDIENTS 

  • ½ Tablespoon olive oil 
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 bunch greens (collard, kale, etc.), stems removed and chopped
  • 2 tomatoes, diced
  • 1 Tablespoon liquid smoke (or alternatively, use smoked paprika)
  • 14 oz can beans (black-eyed peas, cannellini, navy, great northern, etc.), drained and rinsed
  • 1/2 cup vegetable broth, as needed
  • ½ Tablespoon vegan butter
  • 2 – 3 tablespoons lemon juice
  • Salt & pepper, to taste

INSTRUCTIONS

  1. Heat oil in a large skillet over medium heat.
  2. Add the onion and sauté for about 5 minutes, until softened.
  3. Stir in the garlic and cook for 1 more minute, until fragrant.
  4. Add the greens, tomatoes, liquid smoke, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  5. Stir in the beans and continue cooking for another 10 minutes, stirring occasionally. If the mixture starts to stick, add a little vegetable broth as needed. Cook until the greens reach your desired tenderness.
