Squash Chili with No Evil Foods “Chorizo”

Ingredients

  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 sweet potato chopped OR diced butternut squash
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 2 cups winter squash puree homemade: cut and deseeding the squash and baking on 400 degrees for 45-60 minutes. Puree in blender
  • 1 can beans of choice
  • 1 package No Evil Foods Chorizo
  • 1 can diced tomatoes with their juices or 1 cup fresh chopped tomatoes
  • Salt & pepper to taste
  • ½ cup veggie broth or water
  • Optional veggies: handful of leafy greens
  • Toppings: lime avocado, green onion, cilantro, no evil foods chorizo

Instructions

  • Saute onion and garlic for 3-5 minutes. Next, add spices, pepper, and other veggies of choice.
  • Saute 5-7 minutes on medium to high heat. Add beans, chorizo, and tomato. Saute for 3-5 minutes.
  • Add veggie broth or water as needed.
  • Lastly, add squash puree and an optional handful of leafy greens!
