Summer Asian Slaw
INGREDIENTS
- 1 half head Napa, bok choy, or regular cabbage, shredded
- 2 carrots, grated
- ¼ c. finely minced scallions
- Toasted sesame seeds
- OPTIONAL: Pineapple, red pepper flakes, grated summer squash, grated cucumber, slivered radishes, cilantro
Asian Dressing: - 1 T. grated fresh ginger
- 2 T. sesame seeds
- ⅓ c. rice vinegar
- 2 T. soy sauce , tamari, or liquid aminos
- 1 T. agave syrup or honey
- ⅓ c. toasted sesame oil
- 1 clove garlic, grated
- Pinch of salt
DIRECTIONS
- Put all dressing ingredients into mason jar, close lid tightly, and shake well.
- Put vegetables in a large bowl.
- Toss with dressing and sprinkle with the toasted sesame seeds.
