Summer Asian Slaw

INGREDIENTS

  • 1 half head Napa, bok choy, or regular cabbage, shredded
  • 2 carrots, grated
  • ¼ c. finely minced scallions
  • Toasted sesame seeds
  • OPTIONAL:  Pineapple, red pepper flakes, grated summer squash, grated cucumber, slivered radishes, cilantro

    Asian Dressing: 
  • 1 T. grated fresh ginger
  • 2 T. sesame seeds
  • ⅓ c. rice vinegar
  • 2 T. soy sauce , tamari, or liquid aminos
  • 1 T. agave syrup or honey
  • ⅓ c. toasted sesame oil
  • 1 clove garlic, grated
  • Pinch of salt

DIRECTIONS

  1. Put all dressing ingredients into mason jar, close lid tightly, and shake well.
  2. Put vegetables in a large bowl. 
  3. Toss with dressing and sprinkle with the toasted sesame seeds.
