Summer Heat Kale Salad

INGREDIENTS

  • 1 bunch kale, rinsed, de-stemmed, and chopped
  • 1 lemon, juiced (add more to taste)
  • ¼–½ cup olive oil
  • 10–15 sun-dried tomatoes, chopped
  • ½ cup nutritional yeast
  • 1 tsp cayenne powder
  • ½ red onion, finely diced
  • 4 garlic cloves, minced
  • ¼–½ tsp salt, to taste

INSTRUCTIONS

  1. Place the chopped kale in a large mixing bowl. Drizzle with olive oil and sprinkle with salt. Massage the kale with your hands for about 1 minute, or until it softens and turns a vibrant green.
  2. Add the lemon juice, sun-dried tomatoes, nutritional yeast, cayenne, red onion, and garlic to the bowl.
  3. Continue massaging the salad until all ingredients are well incorporated and the kale is tender.
  4. Taste and adjust the lemon juice and salt if needed.
  5. Serve immediately or let it marinate for a few hours in the fridge for even more flavor. Enjoy!
